Parmesan Potato Wedges
  1. Preheat oven to 190°C, fan bake.

  2. Cut the potatoes into wedges & soak for 30 mins in cold water. Pat dry.

  3. Mix all other ingredients in a bowl.

  4. Toss wedges in oil mix and place on a baking tray, reserve the remaining oil for later.

  5. Top with parmesan and salt, bake for 30 minutes.

  6. Serve with crispy bacon bits & fresh cut chives.
