Preheat oven to 190°C, fan bake.
Cut the potatoes into wedges & soak for 30 mins in cold water. Pat dry.
Mix all other ingredients in a bowl.
Toss wedges in oil mix and place on a baking tray, reserve the remaining oil for later.
Top with parmesan and salt, bake for 30 minutes.
Serve with crispy bacon bits & fresh cut chives.
