High-protein Spinach & Feta Biscuits (gluten-free)
  1. Preheat oven to 350°F (175°C) & line a baking sheet with parchment paper.

  2. Heat olive oil in a pan over medium heat. Sauté green onions for 1-2 mins, then add spinach & cook until wilted. Season with salt & pepper. Let cool slightly.

  3. In a bowl, mix egg whites, spinach mixture, almond flour, baking powder & feta until it holds together. If crumbly, add a bit of water or olive oil.

  4. Form into 6 biscuit shapes or drop spoonfuls onto the baking sheet.

  5. Bake for 20-25 mins until golden on the edges.

  6. Let cool & enjoy!
