Preheat oven to 350°F (175°C) & line a baking sheet with parchment paper.
Heat olive oil in a pan over medium heat. Sauté green onions for 1-2 mins, then add spinach & cook until wilted. Season with salt & pepper. Let cool slightly.
In a bowl, mix egg whites, spinach mixture, almond flour, baking powder & feta until it holds together. If crumbly, add a bit of water or olive oil.
Form into 6 biscuit shapes or drop spoonfuls onto the baking sheet.
Bake for 20-25 mins until golden on the edges.
