Add vanilla, almond extract, pudding mix, and eggs one at a time.
In another bowl, whisk flour, baking soda, and salt; add gradually to wet ingredients.
Stir in chocolate chips, M&Ms, and nuts; add food coloring if desired.
Scoop dough onto parchment-lined trays; bake 8–10 minutes until edges are golden.
Cool 2 minutes on pan, then transfer to wire rack.
