Pistachio & Chocolate Leprechaun Cookies
  1. Preheat oven to 375 °F. Cream butter and sugars until fluffy.

  2. Add vanilla, almond extract, pudding mix, and eggs one at a time.

  3. In another bowl, whisk flour, baking soda, and salt; add gradually to wet ingredients.

  4. Stir in chocolate chips, M&Ms, and nuts; add food coloring if desired.

  5. Scoop dough onto parchment-lined trays; bake 8–10 minutes until edges are golden.

  6. Cool 2 minutes on pan, then transfer to wire rack.
