Green Tomato Chili
  1. Place olive oil, veggies, tomatoes, and lime juice in a large skillet.

  2. Sauté over medium heat until all are soft.

  3. Add spices and let simmer another minute or two.

  4. Mix in beans and heat through.

  5. Mash some of the beans with a hand masher to create a thicker base if desired.
