Matcha Cookies
  1. Preheat the oven to 200°C (392°F).

  2. In a medium bowl, whisk together all-purpose flour, almond flour, baking soda, sea salt, and matcha powder until everything is well combined.

  3. In another bowl, mix the melted vegan butter, coconut sugar, maple syrup, and vanilla extract until smooth and creamy.

  4. Gradually add the dry mixture to the wet ingredients and stir until a dough forms. Fold in some vegan chocolate chips or chopped nuts (optional).

  5. Scoop out tablespoons of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

  6. Bake for 8-9 minutes, or until the edges are lightly golden.

  7. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack.

  8. In a small bowl, mix the matcha powder with icing sugar. Once the cookies are slightly cooled, sift this mixture over the top.
