Mix warm water, yeast & brown sugar in a bowl until dissolved.
Add salt + melted butter.
Add 1 cup flour and mix for 2 minutes.
Add the 2nd cup of flour and mix with a rubber scraper.
Turn onto a lightly floured surface and knead until smooth & elastic.
Cut into 6 pieces ➜ makes 3 pretzels.
Shape each piece into a pretzel and place on a baking sheet.
Freeze for 30 minutes to help them hold their shape.
Preheat oven to 475°F.
Bring 2 cups water to a boil and add baking soda.
Boil pretzels (3 at a time) for 15 seconds.
Place on a lightly greased baking sheet.
Bake at 475°F for 8–10 minutes until golden.
Brush with melted butter + any toppings you love!

You can let it rise, 20-30 minutes, an hour is better.
You can do 20 min then stick them in the fridge overnight for better flavor, up to about 5 days. They're good to 7, but start getting pretty funky.

When you're rolling them out, cycle left to right. Should have a line of tubes in front of you. Stretch them till they start snapping back then move on to the next one, they need a couple-five minutes rest in between for the gluten to relax.
After they're formed, give them another 20-60 min rise before boiling/baking.
