Melt butter in a pan and add olive oil
Add sliced onions and a pinch of salt to the pan
Cook the onions down until they caramelise
Add caramelised onions to a blender with miso paste, chicken stock and lemon juice
Blitz the mixture until smooth
Add the blended sauce back to the pan
Boil the ramen noodles according to package instructions
Drain the cooked noodles and add to the oniony sauce
Mix well and serve on a plate
Top with egg yolk, sesame seeds and spring onion
