Remove the kale leaves from the stems and roughly chop them
Rinse the chopped kale well under water and dry it with paper towel
Throw the dried kale into a big bowl
Add the chopped coriander to the bowl
Make the dressing by combining the peanut butter, grated garlic, grated ginger, chopped chilli, olive oil, sesame oil, lime juice, maple syrup, vinegar, and soy sauce
Stir the dressing well and keep tasting until you love the flavor (it should be nutty, spicy and gingery)
Pour the dressing over the kale and coriander and use your hands to coat it all over
Plate up the salad and top with a showering of roasted, salted and crushed peanuts
