  1. Parboil the cabbage leaves for 2-3 minutes

  2. Dry the cabbage leaves

  3. Boil the potatoes

  4. Chop one whole spring onion

  5. Drain the potatoes and let them dry for a couple minutes

  6. Melt butter with the chopped spring onions

  7. Chop up some of the inner cabbage leaves and add them to the butter and onions

  8. Add heavy cream and mash the potatoes

  9. Season with salt and pepper

  10. Add an egg yolk to the mashed potatoes

  11. Rub the inside of a baking dish lightly with avocado oil

  12. Layer the cabbage leaves in the baking dish, overlapping them

  13. Fill the center with the mashed potato mixture

  14. Bake at 375°F for 40 minutes

  15. Let sit for 5 minutes before slicing and serving
