Drizzle a large shallow pot with olive oil.
Place the Boursin in the center.
Pour the uncooked orzo around the Boursin.
Add garlic, pesto, sun-dried tomatoes, cherry tomatoes and broth.
Cover the pot with a tight fitting lid and bake at 425° for 20 minutes.
Add the mozzarella cheese and stir to combine.
Cover and bake 10 minutes more, stir and serve.
