Initiate your air fryer to a temperature of 375 degrees F (190 degrees C).
In a shallow dish, combine the chopped walnuts, dried thyme, smoked paprika, salt, and black pepper. In a separate shallow dish, place the all-purpose flour. In a third shallow dish, lightly beat the two eggs.
Gently pat the cod fillets dry. Dredge each fillet first in the flour, shaking off any extra. Next, dip it into the beaten egg, allowing excess to drip away. Finally, press the fillet into the walnut mixture, ensuring an even coating on all sides.
Line your air fryer basket with parchment paper, then carefully arrange the coated fish fillets, leaving some space between them. You may need to cook in multiple batches depending on your air fryer size.
Cook the fish for 8-10 minutes, or until the crust is golden brown and the fish flakes easily with a fork, indicating it has reached an internal temperature of 145 degrees F (62 degrees C).
Remove the cooked fish from the air fryer. Drizzle each fillet with honey and garnish with fresh chopped parsley if desired. Serve immediately with lemon wedges on the side.
