Fry seitan for 2 minutes
Add onion, garlic, ginger and sauté for another 2 minutes
Add the mushrooms and cook until soft and golden brown, about 3-4 minutes
Pour in vegetable broth and simmer for 10 minutes
In a small bowl, combine the miso, almond butter, sesame oil, soy sauce, chili oil, rice vinegar, and water, then whisk until smooth
Add the miso paste mixture to the simmering broth and let it simmer for 10 minutes
Add the noodles when there are 3 minutes left
Top with fresh cilantro, green onions, sesame seeds, and chili oil, then enjoy
