This step is crucial for achieving a stable emulsion and the fluffy texture that toum is famous for. Take your time—this process should take 7 to 10 minutes. You’ll see the mixture gradually transform into a thick, creamy paste.

  3. Step 3. Add Lemon Juice and Citric Acid: Once all the oil has been incorporated, add the lemon juice and citric acid. Blend for another minute. Taste the Toum and, if needed, adjust the salt or lemon juice to balance the flavours. Blend for another 30 seconds to ensure everything is fully combined.
