Preheat the oven to 420F / 220C.
In a large pot put the peeled potatoes with 1 teaspoon of salt and cover with water.
On medium heat boil the potatoes for about 20 minutes until they start to soften.
Put the drained potatoes in a bowl.
Using a potato masher, roughly mash the potatoes so it's still chunky. Let the potatoes cool for 5 minutes.
Add the rest of the ingredients and mix it all well.
Take a baking pan with parchment paper and spray avocado oil on it.
With wet hands make patties from the mixture and place them on the baking pan.
Spray avocado oil on top and bake in a preheated oven on 420F for 30 minutes. Then transfer to convection broil on 450F for 7-8 minutes to get a nice golden color.
Arrange the Aruk patties on a nice plate with fresh vegetables and Amba tahini.
