In a bowl, mix the yeast, sugar, and milk. Add the flour and mix until combined. Add the softened butter and salt, then coil fold until the butter is fully incorporated. Cover and let the dough rise for 1½ hours, or until doubled in size.
In a separate bowl, mix the melted butter, minced garlic, and chopped Italian parsley.
Cut the dough into small pieces. Dip each piece into the garlic butter mixture, then coat it in shredded mozzarella cheese. Place the pieces into a loaf pan lined with parchment paper.
Cover and let rise for 20 minutes.
Bake at 350°F (175°C) for 25–30 minutes, or until golden brown. Cover with a kitchen towel until warm.
