Add the cooked chicken back into the pan and mix until completely coated.
Start cooking the macaroni pasta according to package directions.
While the pasta is cooking, add fat-free evaporated milk and smoked paprika to the pan.
Add chicken stock powder to the pan.
Add light cream cheese and light grated cheddar cheese, stirring constantly until smooth and creamy.
Drain the cooked pasta and add it to the pan.
Mix everything together until well combined.
Divide the buffalo chicken mac and cheese into four equal servings and enjoy.
