Small Batch Infused Bourbon Old Fashioned
  1. Creating simple syrup: boil 1 cup of water and add 1 cup of sugar until sugar dissolves. Once you have the base simple syrup, you can add any infusion you want, such as 2 sticks of cinnamon and 8 orange peels (fyi, the less white rind you have, the less bitter the syrup)

  2. If you're infusing flavors after the sugar dissolves, let the syrup steep for at least 15 minutes to take in the flavors, then let it cool and strain.

  3. Pour out 5oz from the bottle of bourbon. (you can use it to make a pair of side cocktails for "testing"!)

  4. Add back 4oz of the simple syrup (you should have plenty of syrup left over to use in other cocktails)

  5. Add in 1oz of your choice of bitters. Angostura should be the default, but you can always do something like Black Walnut or Cherry bitters in a different infusion or to mix it up.

  6. If you've done a simple syrup infusion, consider adding in some orange peels into the bottle (again, avoid the white part of the rind, especially for this step to avoid bitterness seeping in) to allow the orange to infuse further with the batch over time. Put the top back on and flip it upside down a few times to mix flavors.
