Paprika Mushroom Broccoli Bowl
  1. Preheat your oven to 180°C.

  2. In a bowl, combine the broccoli florets with olive oil, salt, pepper, and paprika or chilli flakes. Mix well.

  3. Spread the seasoned broccoli on a baking sheet and bake until charred and crispy, which should take about 25-30 minutes depending on your oven.

  4. In a skillet, heat a knob of butter over medium heat until melted and sizzling.

  5. Add the sliced mushrooms to the pan and cook for a few minutes until they start to soften.

  6. Stir in the minced garlic and your seasonings: paprika, black pepper, salt, and oregano or chilli flakes. If you have fresh thyme, you can add that as well.

  7. Continue cooking the mushrooms for a few more minutes until they turn golden brown and release most of their moisture.

  8. Pour in the cream or the mixture of cream and milk, and stir to combine.

  9. Add the parmesan or grated cheese to the skillet and let it simmer until the sauce thickens but remains creamy. If needed, add more cream or milk to adjust the consistency.

  10. Taste the sauce and adjust the seasonings as necessary.

  11. To serve, assemble the dish with your choice of rice or grain, topped with the crispy broccoli and creamy mushroom mixture.
