Heat oven to 425°F.
Toss butternut squash + carrots or potatoes with olive oil, salt & pepper, a pinch of garlic powder or Italian seasoning
Spread veggies out on the pan and roast 10 minutes.
Add the Italian sausage, nestling it among the veg.
Roast another 15–20 minutes, turning once. (I roasted 40 total)
Finish with: a crack of black pepper, optional drizzle of olive oil or splash of balsamic
How to make it
Sausage should be deeply browned; veg should have caramelized edges and soft centers.
