  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease with nonstick spray.

  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together the vegetable oil, egg, milk, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  5. Toss the blueberries with 1 tablespoon of flour to prevent sinking, then gently fold them into the batter.

  6. Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle coarse sugar on top if desired for a bakery-style finish.

  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
