Blend all marinade ingredients in blender.
Marinate chicken for 30 min or overnight or 5 min.
Cook on chicken on med high heat for 5-6 min each side or until temp reaches 165F.
Dice and set in a large mixing bowl.
For the Al pastor sauce, destem & deseed the dried chiles. Soak in boiling water for 10-15 min or until soften.
Dump that water and add the rest of the ingredients the blender along with the chiles. Blend until smooth.
Once chicken is diced, pour 1 tbsp per serving.
Sprinkle with cilantro and lime juice.
Meal Prep Tip: save the chicken and sauce separately in the fridge. Heat up the chicken and a 1 tbsp of sauce per serving in a pan when ready to eat.
