In mixer, combine milk (or water + powder), sugar & yeast; rest 5 minutes
Add eggs & flour, then salt; mix on level 1 till combined
Knead 4 minutes on level 2 till dough clings to hook
Add butter & oil; knead 4-5 minutes on level 2 till silky
Rise 1-1½ hours till doubled
Divide into 30 pieces approximately 1.3 oz (38-40 g); shape balls
Arrange 5x6 on greased parchment pan; rise 30-45 minutes; brush with egg wash (1 egg + 1 teaspoon water)
Bake at 350°F (175°C) 18-20 minutes on middle rack till golden; brush with butter
