YoYo Biscuits
  1. Preheat oven to 160C (fan-forced). Line two baking trays with baking paper.

  2. Beat butter and vanilla essence; add sifted icing sugar beating until well creamy and smooth. Sift into the bowl the remaining dry ingredients. Mix well to combine.

  3. Roll mixture into teaspoonful sized balls and place 5cm apart on the prepared baking trays. I use a small cookie scoop for uniform size. Press the tops of the balls lightly with a fork.

  4. Bake for 10-12 minutes or until just ever so lightly golden. Leave to cool for 10 minutes before moving to a wire rack to cool completely.

  5. To make the filling: beat the butter, vanilla essence and lemon juice until smooth and creamy.

  6. Slowly add the sifted icing sugar, beating well in between additions. When the mixture is completely combined and smooth, add one drop of pink food colouring and beat until the colour is evenly dispersed.

  7. Join two biscuits together with a scoop of filling.
