Cook the bacon and set it aside
In the pot, melt 3 tablespoons of butter and cook the medium onion until it's smelling good
Add a big dollop of garlic and cook until it's smelling good
Add flour and cook it long enough so it doesn't taste like flour
Add 4 cups of unsalted chicken broth, 2 cups of milk, and just under 1 cup of heavy cream
Season with salt, pepper, and ancho chili powder
Add the potatoes and let it come to a simmer, stirring periodically so it doesn't stick
Cook until the potatoes are fork tender
If you have an immersion blender, use it to blend the soup
If not, mash the potatoes up more and add a little milk to them
Put the mashed potatoes back into the soup
Add sour cream and lots of shredded cheese
Add the cooked bacon back in
Mix it all up and add any desired toppings
