Mediterranean Layered Dip
  1. Rinse the chickpeas in cold water and tip into the food processor. Add the tahini, crushed garlic, salt, and lemon juice. Turn on the food processor and slowly pour in the oil while it runs and mixture is well combined.

  2. In a large serving dish, spread the hummus evenly on the bottom.

  3. Layer the tomatoes and cucumber over top.

  4. Drizzle yogurt over the tomatoes and cucumber.

  5. Sprinkle the yogurt with salt and paprika.

  6. Layer the artichoke hearts, roasted red peppers and feta cheese. Sprinkle the parsley over top and garnish with olives.

  7. Serve with fresh vegetables, pita chips or crackers.
