Prepare the Peanut Dressing by combining ½ cup peanut butter, 5 tbsp light soy sauce, ¼ cup honey, 3 tbsp sriracha, 1 garlic clove, ½ tbsp grated ginger, and the juice of 1 lime. Add water as needed to thin the dressing to desired consistency.
Cook the soba noodles according to package instructions.
Slice the red cabbage, carrots, red bell pepper, and cucumber.
Combine the cooked soba noodles, sliced vegetables, and edamame in a large bowl.
Toss the salad with the peanut dressing to coat.
Optionally, add additional salt, lime juice, peanuts, chili flakes, and sesame seeds to taste.
