Sleep Shots
  1. Bring water to boil, add all herbs and spices, reduce to a gentle simmer for 5 minutes

  2. Remove from heat, cover, and steep for 10 minutes while sterilizing bottles in another pot

  3. Strain the tea infusion through fine mesh, then stir in maple syrup, juice, salt, bitters, and either lemon juice or citric acid

  4. Pour warm liquid into glass bottles, fill close to top, seal airtight, and refrigerate

  5. Serve poured over ice with a garnish, or top with seltzer for a spritz
