Sauté seafood: Heat olive oil in a skillet. Cook shallot and garlic for 1–2 minutes.
Add shrimp, scallops, and crab. Season with salt, pepper, and red pepper flakes. Cook for 2–3 minutes, then set aside.
Make sauce: In the same skillet, heat olive oil and stir in flour. Cook for 1 minute.
Add seafood stock and cream.
Stir in mustard, lemon juice, and cheese. Simmer until thick.
Return seafood to the sauce and mix gently.
Assemble & bake: Preheat oven to 375°F. Divide mixture into ramekins or a small baking dish.
Mix panko and cheese, then sprinkle on top.
Bake for 12–15 minutes until golden and bubbling.
Serve: Garnish with parsley. Serve hot with crusty bread, salad, or rice.
