Prep the melon: Chop your cold watermelon and place the cubes into a large serving bowl.
Add the cheese and herbs: Gently scatter the crumbled feta and fresh mint leaves over the top of the watermelon.
Dress it gently: Drizzle the extra-virgin olive oil and fresh lime juice evenly over the salad.
Toss and serve: Use large spoons to very gently toss the ingredients together so the feta doesn't completely break down or turn the melon cloudy. Top with a tiny pinch of flaky sea salt and black pepper if desired, and serve immediately.
