¼ cup heavy cream or whole milk

2 large egg yolks

Brown the meat: Heat the olive oil in a large skillet over medium-high heat. Add the ground meat and cook until browned, breaking it up with a spoon into very small crumbles. Drain any excess fat if needed.

Add aromatics: Stir in the grated carrots, grated onions, and minced garlic. Cook for 2–3 minutes until the vegetables soften.

Season: Stir in the tomato paste, Worcestershire sauce, rosemary, and thyme. Cook for 1 minute.

Deglaze and Simmer: Pour in the red wine and cook until it has reduced by half. Add the stock and bring to a simmer. Cook for about 10–15 minutes until the sauce has thickened but the meat is still moist. Fold in the frozen peas at the very end.
