Roasted Confit Garlic Butter Pasta
  1. Preheat oven to 300°F / 150°C.

  2. Peel garlic cloves and place in a small baking dish.

  3. Pour olive oil over the garlic so it’s fully covered.

  4. Add rosemary.

  5. Roast for 40–50 minutes until soft and golden.

  6. Transfer garlic + some of the oil to a blender.

  7. Add butter, tomato paste, parmesan, parsley, salt & pepper.

  8. Blend until smooth and creamy.

  9. Cook pasta until al dente. Save some pasta water.

  10. Warm sauce in a pan.

  11. Add pasta + a splash of pasta water.

  12. Toss until silky and glossy.

  13. Finish with extra parmesan, parsley & black pepper
