Picadillo Meal Prep
  1. Cube potatoes and soak in water while prepping the rest.

  2. Chop onions, serranos, and mince garlic. Blend tomatoes with no water.

  3. Brown ground beef in a large pot with salt, pepper, garlic powder, oregano, and cumin.

  4. Add onions, garlic, and serranos. Cook until beef is fully browned.

  5. Add potatoes and cook briefly.

  6. Add blended tomatoes and beef broth. Season again.

  7. Taste and adjust seasoning as needed. If it tastes too tomatoey, add a little salt, bouillon, or a splash of Worcestershire sauce.

  8. When potatoes are almost tender, add frozen veggies and simmer until everything is cooked through.
