Start by removing the stems from your cherry tomatoes and then cutting them into fourths and placing them to the side.
Square off your ginger by cutting off the sides, then cut that into thin slices, and finally cut those slices into thin matchsticks.
Roughly crush and chop your garlic, finely dicing it.
Thinly slice some green onions, separating the whites from the greens.
Crack 4 eggs into a bowl, adding in sesame oil, salt, and white pepper. Whisk it all together.
Preheat your pan to medium-high heat, melt the butter, and pour in your eggs. Use a rubber spatula to create ribbons of folded egg.
Remove the eggs when mostly set and add the rest of your butter to the pan along with diced cherry tomatoes, garlic, ginger, and the whites of your green onions.
Add a pinch of salt and mash lightly, then incorporate soy sauce, oyster sauce, and ketchup, cooking for 2-3 minutes.
Add back in your eggs and fold everything together, cooking for another 30 seconds.
Scoop some fresh rice onto a plate and top it with your tomato egg and green onions.
