Warm water to 110 degrees and add yeast, allow to bloom for 5-10 minutes
Combine flour, sugar, and salt in a large bowl of a stand mixer
Add olive oil to the bloomed yeast/water mixture, then add to the stand mixer bowl
Mix for 8 minutes in a stand mixer
Oil a bowl and add the dough, proof in the fridge for 20 hours, then remove 4 hours prior to bring to room temperature
Punch down the dough and fit to a pizza pan
Add pizza sauce and cheese
Bake on a preheated pizza stone for about 10 minutes at 500 degrees
Remove and top with parmesan cheese and basil
