Place beef chuck in the slow cooker
Whisk soy sauce, beef broth, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger
Pour the mixture over the beef, cover, and cook on LOW for 7–8 hours until fork tender
Remove beef and shred into large rustic chunks
Mix cornstarch and water, stir into the sauce, and cook 10 minutes until thick and glossy
Return beef to the slow cooker and coat in the rich glaze
Finish with sliced green onions and sesame seeds before serving
