Preheat oven to 350°F. Grease two 9" round cake pans.
Beat eggs and sugars until light and frothy (3-5 minutes).
Mix in oil, mashed bananas, pineapple, and vanilla.
Add dry ingredients and mix until just combined.
Fold in coconut and pecans.
Divide batter evenly between pans.
Bake 45-60 minutes until golden brown and a toothpick comes out clean.
Cool completely before frosting.
Beat all frosting ingredients until smooth and creamy. Adjust powdered sugar if needed (up to 2 extra cups).
