Hummingbird Cake
  1. Preheat oven to 350°F. Grease two 9" round cake pans.

  2. Beat eggs and sugars until light and frothy (3-5 minutes).

  3. Mix in oil, mashed bananas, pineapple, and vanilla.

  4. Add dry ingredients and mix until just combined.

  5. Fold in coconut and pecans.

  6. Divide batter evenly between pans.

  7. Bake 45-60 minutes until golden brown and a toothpick comes out clean.

  8. Cool completely before frosting.

  9. Beat all frosting ingredients until smooth and creamy. Adjust powdered sugar if needed (up to 2 extra cups).

  10. Frost the cake and enjoy!
