Cheesy Taco Tortellini
  1. Spray Crock Pot.

  2. Brown 2 pounds of ground beef and drain excess grease. Add to Crock Pot.

  3. Add 2 cans of Rotel, 2 packs of taco seasoning, 1 can of southwest corn, and 1 4 ounce can of green chilies to the Crock Pot.

  4. Add 1 block of cream cheese (softened or cubed) to the Crock Pot.

  5. Stir ingredients in the Crock Pot.

  6. Put lid on Crock Pot and cook on high for 1 to 2 hours or low for 3 to 4 hours.

  7. Stir ingredients. Add 1 bag (19 ounces) of frozen tortellini and stir to cover.

  8. Put lid back on and cook on high for 30 to 40 minutes until tortellini is cooked.

  9. Add 2 cups of shredded cheese and mix together.

  10. Put lid back on for 5 to 10 minutes to allow cheese to melt.

  11. Serve, optionally topped with sour cream.
