Place chicken breasts at the bottom of your slow cooker
Pour in Rotel, onions, carrots, beans, chicken broth, spices, and Buffalo sauce.
Allow to cook on low for 6-8 hours.
30 minutes before serving, place a block of room temperature cream cheese in the pot to warm.
30 minutes later, remove chicken from pot and shred.
Whisk in cream cheese and ½ cup of heavy cream.
Add in shredded chicken and mix.
Top with additional drizzle of Buffalo sauce and blue cheese crumbles (optional).
