Sweet Potato Vegan Burrito Bowls
  1. Preheat the oven to 425°F.

  2. Add the sweet potatoes, garlic, jalapeno, olive oil, taco seasoning to a large bowl and toss everything together.

  3. Spread the sweet potatoes out evenly on a foil lined baking sheet.

  4. Place in the oven and roast for 15-20 minutes.

  5. While the sweet potatoes are roasting, combine the cooked rice with the fresh cilantro and lime juice, then divide the rice between four bowls.

  6. Top the bowls with the roasted sweet potatoes, avocado, romaine lettuce, diced tomatoes and creamy chipotle sauce.
