Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve ½ cup of pasta water before draining.
Season chicken strips with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
Cook chicken for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
Reduce heat to medium. Sauté minced garlic in the same skillet for 30 seconds until fragrant.
Pour in heavy cream and bring to a gentle simmer. Crumble in the Boursin cheese and stir until completely melted and smooth.
Gradually whisk in the reserved pasta water until the sauce is silky. Stir in the Parmesan cheese.
Return the chicken to the skillet. Add the drained pasta and toss until every piece is fully coated in the herb sauce.
Garnish with fresh herbs and red pepper flakes. Serve immediately while warm and glossy.
