Ingredients:
For the Pie Filling:
For the Pie Crust:
One package (2 crusts) store-bought or homemade pie crusts
Instructions:
Preheat Oven:
Preheat your oven to 400°F (200°C).
Prepare Pie Crust:
If using store-bought pie crusts, follow package instructions for bringing to room temperature if necessary.
Prepare a 9-inch pie dish with one of the pie crusts, pressing it gently into the bottom and sides of the dish.
Make the Pie Filling:
In a large bowl, combine the drained apricot halves, granulated sugar, cornstarch, cinnamon (if using), nutmeg (if using), and lemon juice. Gently toss until apricots are coated evenly.
Assemble the Pie:
Pour the apricot filling into the prepared pie crust, spreading it out evenly.
Dot the top of the filling with small pieces of unsalted butter.
Top with Pie Crust:
Place the second pie crust over the filling. You can leave it whole or cut it into strips for a lattice crust, or use cookie cutters to make decorative shapes.
Seal the edges of the pie crusts together and crimp with a fork or your fingers.
Bake the Pie:
Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
Cool and Serve:
Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before slicing and serving.
