In a blender, combine 2 cups cottage cheese, 4 eggs, a dash of onion powder, and a dash of salt. Blend until smooth.
Line a baking sheet with parchment paper and spray it lightly with cooking spray. Pour the mixture onto the parchment and spread evenly.
Bake at 400°F (200°C) for 35–40 minutes until lightly golden and firm.
In a bowl, mix together 1 can of tuna (12 oz), 1 cup cottage cheese, 1 tbsp ground mustard, 1 tbsp pickle juice, 1 tbsp dill relish, a dash of onion powder, and a dash of salt. Mix well and season to taste.
Once the flatbread has cooled, cut it into thirds or fourths. Add a scoop of the tuna mixture onto each piece.
Top with a squeeze of lemon, some lettuce, and cheese of your choice (optional).
Roll or fold and enjoy!
