Mexican Street Corn Pasta Salad
  1. Prepare the bow tie noodles following the directions on the packaging. Once done, drain and set aside.

  2. Prepare the sauce by mixing together the yogurt, sour cream, juice from 1 lime, 1.5 tsp chili powder and ½ tsp paprika. Add in sriracha, salt and pepper to taste.

  3. Heat a medium sized pan over medium heat and lightly drizzle with olive oil. Add in the corn and season with ½ tsp paprika and ¼ tsp salt. Fry the corn until it's charred.

  4. In a large mixing bowl, combine the noodles, chicken, cherry tomatoes, red onion, cilantro, corn and dressing. Mix everything together.
