Prepare Chicken
Pound chicken to even thickness.
Season with salt, pepper, and paprika.
Coat lightly in flour, shaking off excess.
Cook Chicken
Cook chicken 3-4 minutes per side until golden and cooked through.
Transfer to a plate.
Make Sauce
Reduce heat to medium. Add chicken stock, scraping up bits from the bottom. Cook until reduced by half.
Add butter. Once melted, add garlic and cook 30 seconds until fragrant.
Stir in cream, dijon mustard, wholegrain mustard, thyme, and honey.
Simmer gently 3-4 minutes until sauce thickens.
Reduce heat to low. Stir in parmesan until melted and smooth.
Season with salt and pepper to taste.
Finish Dish
Return chicken to the sauce with resting juices.
Simmer gently 2-3 minutes until chicken is heated through and coated.
Serve chicken and sauce over mashed potatoes. Garnish with parsley.
