Blackberry Lemon Bars
  1. Preheat oven to 350° F.

  2. In a large mixing bowl, beat European Style Butter and sugar together until light and fluffy. Add the eggs, and mix until just combined, then add lemon juice and beat until incorporated.

  3. Whisk together flour, baking powder, and salt, then add to the wet ingredients. Mix until combined, but don't over mix.

  4. Add blackberries and fold into batter with a wooden spoon or spatula.

  5. Transfer mixture into a well-greased 9x13 baking dish and spread into an even layer.

  6. Bake at 350° for 30-35 minutes, or until edges are golden and a toothpick inserted into the center comes out clean.

  7. Meanwhile, make the glaze: Mix fresh lemon juice with powdered sugar until well combined.

  8. Pour glaze over the completely cooled lemon bars. Spread evenly and allow glaze to set before cutting and serving.
