Over medium heat, melt butter in a pan. Add remaining ingredients (apart from dark chocolate) and mix.
Once dates soften, mash them to ensure all the ingredients are mixed together.
Turn off heat and once cooled, transfer the date mixture to some baking paper/cling film, and roll into a log.
Refrigerate the log to make it easier to slice (optional).
Melt your chocolate and cover each piece with chocolate.
Refrigerate until set.
