Spicy Tofu & Chicken Noodles
  1. Add the silken tofu, tahini, soy sauce, miso, Gochugaru and vinegar to a blender and pulse until smooth without overblending

  2. Julienne the spring onions and pick the coriander

  3. Slice the cucumber into thin rounds, stack them into piles and cut into strips

  4. Mix the cucumbers and spring onion greens together

  5. Add the chicken to a hot pan over medium heat to get colour, then break up

  6. Deglaze the pan with mirin and add in the seasonings, cooking for a few more minutes

  7. Cook the noodles according to package instructions

  8. Plate up with noodles on the bottom, pour sauce over, chicken on one side, salad on the other

  9. Finish with sesame seeds
