Preheat the oven to 425°F.
Halve any large tomatoes and then place on a parchment lined sheet tray along with other small tomatoes. Coat in a small amount of olive oil, salt and pepper. Roast in the oven for 40-50 minutes, until golden. Remove from the oven and set aside.
In a pot over medium heat, add 2 tbsp of olive oil. Add the onion and saute until translucent. Salting as you go. Once cooked, add the minced garlic and cook for another 2 minutes. Add tomato paste and cook for 2 minutes.
Stir in the roasted tomatoes, chicken stock, basil, thyme and red pepper flakes. Season with salt and pepper to taste and bring it up to a simmer. Top with a lid and simmer on low for 20 minutes to develop flavor.
Remove the lid and turn off the heat. Remove the thyme and discard. Using an immersion blender, blend until smooth.
Stir in the heavy cream and taste for seasoning, adjust as needed.
