Cook rice to package instructions. Steam squash, zucchini and lima beans until done - add to rice mixture. In medium cast-iron skillet heat oil, add onion, garlic and peppers and saute until soft, but not brown. Add to rice and season with pepper and paprika and additional salt, if desired. Stir in parsley.
