Blend the cottage cheese until smooth.
In a saucepan, melt the butter over medium heat.
Whisk in the flour and cook for 1-2 minutes.
Gradually whisk in the milk and cook until thickened, about 5 minutes.
Remove from heat and stir in the blended cottage cheese, shredded cheddar cheese, garlic powder, onion powder, mustard powder, and smoked paprika.
Season with salt and pepper to taste.
Add the cooked Banza pasta to the cheese sauce and stir to combine.
Serve hot, garnished with fresh chives.
